Peppers Moonah Links Resort in Fingal, VIC, is seeking a skilled Sous Chef to join our superstar team. You will lead a busy kitchen across multiple outlets, partner with the Executive Chef, and drive quality, cost control and staff development in a fast-paced environment.

We value a natural leader with proven Sous Chef experience, capable of managing prep, ordering and kitchen processes while supporting a rotating 7-day roster that includes mornings, nights and weekends.

Qualifikationen

• Proven experience as a Sous Chef.
• A natural leader who inspires, supports, and lifts the team around you.
• Comfortable across a la carte service, buffets, and fast paced high volume functions.
• Proficient at managing prep, ordering, service and kitchen processes.
• Trade qualifications and full working rights in Australia.
• Available across a rotating 7-day roster, including mornings, nights and weekends.

Aufgaben

• Ensure high quality and presentation of food provided to Guests, according to Property standard and within a reasonable timeframe of service.
• Work across all outlets and sections of the Kitchen - Breakfast, Bar, Restaurant, In room dinning, Conference and Events, woodfire pizza and cabinet.
• Work alongside the Executive Chef to achieve set profit targets for the outlet.
• Oversees training, growth and development of kitchen Team Members of a lower level, ensuring consistent leadership is demonstrated in the kitchen during service periods.
• Foster and promote a harmonious working environment within the kitchen and wider outlet team, encouraging open communication during service periods.
• Seasonal a-la-carte menu design and costing with expectation to capture both in-house and local markets.
