Job summary

Delaware North Australia is seeking a Head Chef to lead the Mindil Beach Casino Resort kitchen in Darwin on a 12-month contract. You will oversee The Vue restaurant and in-room dining, VIP Bar, Sportsbar, Infinity and Lagoon, bringing high-end culinary expertise to a diverse, vibrant environment.

You will develop innovative menus, mentor a large team, manage food costs and labour, uphold HACCP standards, and drive efficiency across menus and service.

Qualifications

• Proven experience managing large-scale kitchen operations.
• Experience in high-end restaurants (hatted preferred) or functions.
• Strong track record leading diverse culinary teams.
• Expertise in menu development, stock management and cost control.
• Strong commercial acumen with outcomes-focused mindset.
• Relevant culinary qualifications and credentials.
• Proficiency with stock control systems, spreadsheets and accounting software.
• Excellent communication and leadership skills.

Responsibilities

• Oversee daily kitchen operations across The Vue, in-room dining, VIP Bar, Sportsbar, Infinity and Lagoon.
• Develop innovative menu concepts aligned with trends and guest preferences.
• Provide mentorship and hands-on training to a high-performing team.
• Set and uphold exceptional food standards through efficient processes.
• Assist in managing department budgets and food costs; drive efficiency.
• Manage performance and labour costs for permanent and casual staff.
• Champion on-site food safety and HACCP accreditation.
