Delaware North Australia seeks a full-time Head Chef with Asian specialty to lead our Mindil Beach Casino Resort kitchen in Darwin. You’ll drive authentic flavours, modern techniques, and menu innovation in a high-volume, premium dining environment.

You will mentor a diverse team, manage food quality and HACCP standards, supervise cost controls and labour planning, and partner with outlets to elevate guest satisfaction. Applicants must have unrestricted work rights in Australia.

The opportunity

Delaware North Australia is seeking a full-time Head Chef with Asian specialty experience to join our team at Mindil Beach Casino Resort in Darwin. As Head Chef, you will lead a fast-paced kitchen, bringing authentic flavours, modern techniques, and creative flair to a diverse and vibrant dining environment.

As part of our strategy to elevate our culinary offering and enhance guest satisfaction, we require a strong culinary leader with extensive experience across key Asian cuisines, including Chinese, Korean, Japanese, and Malaysian. The successful candidate should have a proven track record in high-volume and premium dining environments, with the ability to drive menu innovation while maintaining authenticity and consistency.

You will lead menu development, introduce contemporary Asian dining concepts, strengthen quality control measures, and support the overall commercial performance of the outlets.

What will you do?

• Design and evolve menus that showcase authentic Asian flavours while incorporating modern techniques and current dining trends

More about you

• Proven experience leading large‑scale kitchen operations, ideally within high‑volume Asian cuisine
• Background in premium dining and/or large‑scale functions, with experience in hatted or high‑end venues highly regarded
• Demonstrated ability to lead, develop and inspire diverse culinary teams
• Strong expertise in Asian menu development, alongside stock control and cost management
• Commercially driven, with a track record of delivering operational and financial outcomes
• Relevant culinary qualifications, with a focus or exposure to Asian cuisine preferred
• Confidence using kitchen and business systems, including stock control platforms, spreadsheets and reporting tools
