Frontline Recruitment Group is partnering with a growing artisan bakery in Queensland to hire a Head Baker. The role leads high-volume production across bread, sourdough, viennoisserie and patisserie in a brand-new bakery opening mid-November to December.

You will plan, lead and oversee daily production, manage the baking team and ensure quality and consistency of premium products. We are seeking a proven baking professional who can work across day and night shifts, with a strong leadership

Qualifications

• Qualified Baker with a minimum of 5 years' senior baking or Head Baker experience.
• Proven experience leading high-volume production across bread, sourdough, viennoisserie and patisserie.
• Strong leadership abilities with a track record of training and motivating a team.
• Ability to manage day and night production to meet volume and quality targets.

The Company

Our client is a growing artisan bakery business with a strong reputation for quality, consistency and exceptional baking. With a focus on premium products and traditional baking techniques, the business produces a diverse range of artisan sourdough, viennoisserie, patisserie and freshly baked products across a high-volume production environment. With a supportive team culture and continued growth ahead, this is an exciting opportunity for an experienced Head Baker to take ownership of production and play a key role in maintaining the quality and consistency of the business. A NEW BAKERY IS ALMOST COMPLETE WITH OPEN DUE IN MID-NOVEMBER EARLY DECEMBER

The Role

As Head Baker, you will take responsibility for planning, leading and overseeing daily production across bread, artisan sourdough, viennoisserie, patisserie and bake-off. This is a hands‑on leadership position requiring someone who understands the demands of high‑volume production while maintaining the quality, consistency and presentation expected from a premium artisan bakery. You will work closely with the 2IC and Operations Manager, leading the baking team and ensuring production runs efficiently across both day and night operations. Your Skills & Experience To be successful in this role, you will bring:

• Qualified Baker with a minimum of 5 years' experience in a senior baking or Head Baker position
• Proven experience managing high-volume production across bread, viennoisserie, patisserie and bake-off
• Strong technical knowledge and hands‑on experience with artisan sourdough production
• Demonstrated ability to plan and manage daily production to meet volume and quality requirements
• Strong leadership skills with the ability to train, motivate and hold a team accountable
• Exceptional attention to detail and a genuine commitment to product quality and consistency
• Ability to work across both day production and night baking operations when required
• Strong organisational skills and the ability to perform in a fast‑paced production environment
• A positive, honest and accountable approach to leadership
• Ability to hit the ground running and take ownership of the bakery operation
