Job summary

Marlow Hotel Management is seeking an experienced Assistant Manager in Sydney to join the leadership team and work with the General Manager to drive venue operations, develop high‑performing teams, and ensure a safe, efficient hospitality environment.

You will coach staff, oversee daily operations across gaming, bar and bistro, maintain presentation standards and ensure compliance with liquor and gaming regulations.

Qualifications

• Previous hospitality management experience in a pub, hotel or large venue.
• Strong leadership capability with a focus on coaching and developing people.
• Solid understanding of gaming operations and compliance.
• Excellent communication and customer service skills.
• Strong organisational skills with the ability to prioritise and multi‑task.
• Experience managingKPIs, labour and financial performance.
• A calm, professional approach under pressure.
• Current RSA and RCG certifications.

Responsibilities

• Lead, coach and develop staff to build capability, confidence and strong service behaviours.
• Oversee daily venue operations across gaming, bar and bistro.
• Maintain high standards of presentation, ambience and cleanliness.
• Ensure compliance with liquor, gaming and venue regulatory requirements.
• Support gaming performance through strong floor presence, guest engagement and adherence to procedures.
• Monitor labour costs, support roster planning and drive operational efficiencies.
• Manage stock control, GP targets and wastage reduction.
• Prepare shift reports and communicate operational updates to the management team.
• Build strong relationships with guests, suppliers and internal stakeholders.
• Support the leadership team in maintaining a safe, well‑run and high‑performing venue.
