Job summary

Sofitel Sydney Wentworth is seeking a Chef De Partie to join its luxury breakfast kitchen. You will set up and run an assigned section, prepare a la carte and buffet items, and uphold five-star presentation and standards.

You'll ensure mise en place, HACCP compliance, and collaborate with the wider kitchen and front‑of‑house teams to deliver seamless service. Trade qualification in Commercial Cookery is required, with strong guest‑focused delivery and flexibility for early mornings and weekends.

Qualifications

• Trade qualification in Commercial Cookery or equivalent experience.
• Previous Chef de Partie experience or readiness to step up in a hotel/luxury/breakfast environment.
• Sound knowledge of food safety and HACCP requirements.

Responsibilities

• Set up, prepare and run an assigned section of the breakfast kitchen, ensuring quality and presentation standards.
• Prepare and replenish hot and cold buffet items, à la carte dishes and in-room dining breakfast orders promptly.
• Ensure mise en place is completed accurately and efficiently ahead of each service.
• Maintain strict food safety, HACCP and hygiene standards across all preparation and service areas.
• Monitor stock levels, minimise wastage and communicate ordering requirements to the Sous Chef.
• Support the training and development of Commis Chefs and Kitchen Hands within the section.
• Work collaboratively with the wider kitchen and front-of-house teams to ensure a seamless breakfast service.
• Maintain a safe, clean and well-organised kitchen environment at all times.
