Job summary

Sofitel Sydney Wentworth is seeking an experienced Breakfast Chef de Partie to lead breakfast service across outlets, including à la carte and buffet offerings. You will work with the Sous Chefs, Executive Chef and broader culinary team to deliver a consistently exceptional guest experience.

Ideal candidates hold a Commercial Cookery qualification, have HACCP knowledge, and are available for early morning shifts, weekends, and public holidays in a 5-star hotel environment.

Qualifications

• Trade qualification in Commercial Cookery (Certificate III or equivalent)
• Strong food safety and HACCP knowledge required
• Availability for early morning shifts, including weekends and public holidays
• Proven experience as CDP or Demi Chef ready to step up in luxury/high-volume settings

Responsibilities

• Set up, run and pack down the breakfast buffet and à la carte breakfast service to Sofitel standards
• Prepare and cook hot and cold breakfast items to a consistently high standard
• Maintain food safety, hygiene, and HACCP compliance throughout service
• Manage mise en place and stock rotation for your section
• Support with ordering, costing awareness, and minimising wastage
• Supervise and mentor junior kitchen team members and casual staff during breakfast shifts
• Liaise with Front of House to ensure smooth, guest-focused service
• Assist with events and in-room dining as required

Job Description

Qualifications

About You

• Proven experience as a CDP, or a strong Demi Chef ready to step up, ideally in a hotel, luxury or high-volume environment
• Strong food safety and HACCP knowledge
• Availability for early morning shifts, including weekends and public holidays
• A positive, proactive team player who takes pride in consistency and detail
• Previous experience in a 5 star hotel or high-end restaurant highly regarded
