Job summary
Sofitel Sydney Wentworth in central Sydney is seeking an experienced Breakfast Chef de Partie to lead breakfast service across our outlets, from buffet to à la carte. You will work with the Sous Chefs and Executive Chef to maintain Sofitel standards and deliver a memorable dining experience.
The role requires early mornings, weekends and public holidays, a trade qualification in Commercial Cookery, and a proactive, detail-focused chef with luxury-hotel or high-volume experience.
Qualifications
- Trade qualification in Commercial Cookery (Certificate III or equivalent).
- Proven experience as a CDP or strong Demi Chef ready to step up, ideally in a hotel, luxury or high-volume environment.
- Sound knowledge of breakfast buffet and à la carte service.
- Strong food safety and HACCP knowledge.
- Availability for early morning shifts, including weekends and public holidays.
- A proactive team player with pride in consistency and attention to detail.
- Previous experience in a 5-star hotel or high-end restaurant highly regarded.
Responsibilities
- Set up, run and pack down breakfast buffet and à la carte breakfast service to Sofitel standards.
- Prepare and cook hot and cold breakfast items to a high standard.
- Maintain food safety, hygiene, and HACCP compliance during service.
- Manage mise en place and stock rotation for your section.
- Assist with ordering, costing awareness and minimising wastage.
- Supervise and mentor junior kitchen team members and casual staff during breakfast shifts.
- Liaise with Front of House to ensure smooth guest-focused service.
- Assist with events and in-room dining as required.

As our busiest and most visible service period, breakfast sets the tone for every guest's day, and you'll play a key role in delivering a consistently exceptional experience. You'll work closely with the Sous Chefs, Executive Chef and the broader culinary team.
