Job summary

Mercure Perth, part of Accor, seeks an Assistant Food & Beverage Manager to lead Cuccina & Beccarria operations, coach staff, and drive guest satisfaction. You will oversee rosters, training, and service standards while supporting other F&B outlets and events in a dynamic hotel setting.

Reporting to the Food & Beverage Manager, you’ll manage beverage costs, budgets, and stock control, ensuring compliance with safety and licensing rules.

Qualifications

• Proven leadership experience in hospitality management or operations.
• Strong guest service focus and team development abilities.
• Budget management, cost control and financial awareness required.
• Knowledge of food safety, hygiene standards, and compliance.

Responsibilities

• Lead daily F&B operations and ensure consistent, friendly service across venues.
• Oversee recruitment, training, scheduling and performance reviews for the team.
• Monitor costs, inventory, beverage and stock levels; report on variance and opportunities.
