Job summary

Mercure Perth is seeking an Assistant Food & Beverage Manager to lead the Cuccina & Beccarria operations, ensure guest satisfaction and uphold service standards. You will support other F&B services, coach teams, manage rostering, costs and stock while driving profitability across the department.

You will report to the F&B Manager and work a rotating roster including mornings, afternoons, evenings, weekends and public holidays, in a busy Perth CBD hotel setting.

• Experience in menu development, curation, and food and beverage trend analysis.
• Strong analytical and problem-solving skills with decisive, informed decisions.

Responsibilities

• Lead daily operations at Cuccina & Beccarria, supporting the team on the floor and ensuring consistently friendly, professional and efficient service.
• Support the hotel’s other food and beverage services, including the Lobby Bar, conference room, room service and minibar.
• Coach, train and motivate team members, building their confidence, product knowledge and service skills.
• Assist with recruitment, induction, performance reviews and ongoing team development.
• Support rostering, verify team member time records and monitor staffing levels to meet business needs and manage wage costs.
• Monitor beverage costs, stock levels and ordering requirements, completing monthly beverage stocktakes and timely reporting.
• Assist with monitoring departmental budgets, controlling costs and identifying opportunities to increase revenue and profitability.
• Ensure responsible service of alcohol practices, licensing requirements, food safety and workplace health and safety standards are maintained.
• Oversee opening and closing procedures, cash handling, till balancing and the accurate operation of point-of-sale systems.
• Maintain a clean, safe and welcoming environment, ensuring equipment is well cared for and maintenance needs are reported promptly.
• Respond to guest enquiries and complaints with professionalism, using feedback to improve service and guest satisfaction.
• Deliver on the Mercure service promise and recognise our Accor Live Limitless loyalty members.
• Run regular team briefings and work closely with other departments to support smooth hotel operations.
• Take responsibility for the food and beverage department in the absence of the Food & Beverage Manager.
• Work a rotating roster, including early mornings, afternoons, evenings, weekends and public holidays.
