Delaware North Australia is seeking a Head Chef to lead the Mindil Beach Casino Resort kitchen in Darwin on a 12-month contract. You will oversee The Vue restaurant and in-room dining, VIP Bar, Sportsbar, Infinity and Lagoon, bringing high-end culinary expertise to a diverse, vibrant environment.

You will develop innovative menus, mentor a large team, manage food costs and labour, uphold HACCP standards, and drive efficiency across menus and service.

The opportunity

Delaware North Australia is hiring a full-time Head Chef to join our team at Mindil Beach Casino Resort in Darwin on a 12-month contract. As Head Chef, you will lead our bustling kitchen operations at The Vue restaurant and oversee culinary operations for in-room dining, VIP Bar, Sportsbar, Infinity and Lagoon.

You will utilise your high-end culinary experience to meet the demands of this diverse and vibrant environment.

What will you do?

• Oversee the daily operations of the kitchen, with responsibility across The Vue, in-room dining, VIP Bar, Sportsbar, Infinity and Lagoon

• Provide strong leadership, mentorship and hands‑on training to foster a high‑performing, motivated team
• Set and uphold exceptional food standards through efficient systems and processes
• Assist in managing department budgets, food costs, utilising IT systems to drive efficiency and profitability
• Manage performance and labour costs for permanent and casual kitchen staff
• Champion on‑site food safety and HACCP accreditation

More about you

• Proven experience managing large-scale kitchen operations
• Experience across either high end restaurants (hatted preferred) and/or functions
• A strong track record of leading and inspiring diverse culinary teams
• Expertise in menu development, stock management, and cost control
• Strong commercial acumen with a track record of delivering business outcomes
• Relevant culinary qualifications
• Proficiency in business technology, including stock control systems, spreadsheets, and accounting software
• Excellent communication and leadership skills, with the ability to engage at all levels
