Job summary

Pub Chow Pty Ltd trading as Lord Raglan Hotel is seeking an experienced Cook to join our Alexandria kitchen team. We offer a pub dining experience with hearty meals and classic favourites, and we are looking for someone who can consistently produce quality dishes and maintain safety standards.

The role requires at least 1 year of cooking experience, strong food safety knowledge, precise portion control, and the ability to work efficiently in a busy kitchen environment.

Qualifications

• Minimum 1 year of experience as a Cook
• Comprehensive understanding of HACCP guidelines, WHS, and food handling regulations
• Precision in portion control, temperature monitoring, and high presentation standards

Responsibilities

• Checking the quality, freshness, and suitability of ingredients prior to food preparation to ensure meals meet the venue's standards.
• Preparing, cooking, and presenting a variety of menu items in accordance with established recipes and kitchen procedures.
• Operating and monitoring kitchen equipment including ovens, grills, fryers, and stovetops, ensuring correct temperatures are maintained during food preparation.
• Seasoning and adjusting dishes throughout the cooking process to maintain consistency and flavour in accordance with the menu specifications.
• Portioning and plating meals for service, ensuring presentation standards are met and completing dishes with appropriate sauces, gravies, and garnishes.
• Safely storing raw and prepared food in refrigerated or temperature-controlled storage areas in accordance with food safety and hygiene standards.
• Preparing meals that accommodate dietary requirements and customer preferences where necessary.
• Assisting with menu planning and estimating ingredient quantities required to maintain adequate kitchen stock levels.
• Supporting the supervision of junior kitchen staff and apprentices to maintain efficient kitchen operations.

The Lord Raglan Hotel offers a welcoming pub dining experience, serving a range of hearty meals, including classic pub favourites, burgers, grilled dishes and other menu items. We are looking for a Cook who can consistently prepare quality meals, maintain food safety standards and contribute to the efficient operation of our kitchen.
