Job summary

NRMA Parks & Resorts invites a skilled Chef to lead our in-house resort kitchen, Tides Kitchen and Bar, ensuring top-quality breakfasts, poolside service, in-room dining and dinner experiences.

You will support the Head Chef in daily operations, train staff, plan menus using local produce, manage inventory and costs, and uphold strict food safety standards in a coastal resort setting. This full-time role offers progression within NRMA and a dynamic, collaborative team environment.

Qualifications

• Hands-on experience in busy kitchen operations.
• Experience leading, coaching and mentoring a team.
• Strong understanding of food safety and sanitation standards.

Responsibilities

• Assist Head Chef in daily kitchen operations across breakfast, poolside, room service and dinner services.
• Oversee and train kitchen staff to maintain high standards of quality and presentation.
• Collaborate with Head Chef to plan menus and daily specials using seasonal ingredients.
• Monitor inventory, order supplies, and keep accurate records to ensure smooth kitchen running.
• Ensure all dishes are prepared to high standards of quality and presentation before serving.
• Assist with managing kitchen costs and minimizing waste through efficient prep and inventory control.
• Assist with rosters in line with budgets and applicable hospitality awards.
