Job summary

NRMA Parks and Resorts invites an experienced Head Chef to lead our busy kitchen at Murramarang Beachfront Holiday Resort, located on NSW’s stunning South Coast. You’ll oversee the Bistro, Skippy's Takeaway, and events and conference centre, delivering modern Australian dining in high‑volume, guest‑focused environments.

Qualifications

• Formal qualification in Commercial Cookery.
• Experience as Head Chef or senior role in a resort, hotel, club or hospitality venue.
• Current Food Safety Supervisor Certification.
• Experience delivering food service for events, weddings and group functions.
• Ability to manage food costs, stock control, ordering and kitchen budgets.
• Strong leadership and team development skills.

Responsibilities

• Lead and inspire the kitchen team with clarity and hands-on leadership.
• Oversee Bistro, Skippy's Takeaway, and events/conference facilities.
• Deliver exceptional food for events, weddings and group bookings.
• Ensure food is prepared and presented to brand standards and guest expectations.
• Manage department rosters to meet operational needs.
• Monitor costs, waste, portions and menu performance to hit budgets.
• Collaborate with Group F&B Manager on menu development and supplier governance.
• Create innovative menus for functions and weddings and source local produce.
• Liaise with restaurant teams to ensure seamless service and guest experience.
• Maintain a safe, clean and hygienic kitchen environment and record-keeping.
