Four Seasons Hotel Sydney is seeking a Chef de Partie for MODE Kitchen & Bar, renowned for contemporary Australian cuisine and premium local produce. You will manage a kitchen section with precision, delivering high-quality dishes and leading a team in a luxury setting.

Ideal candidates have experience as Chef de Partie or senior Demi Chef in high-volume, fine dining. Flexibility for a rotating roster, and strong food safety knowledge are essential to maintain top standards across all service

Qualifications

• Demonstrated passion for culinary excellence.
• Experience as Chef de Partie or strong Demi Chef in luxury/fine dining.
• Experience in high-volume, à la carte operations.
• Knowledge of food preparation techniques and safety standards.

Responsibilities

• Prepare and present high-quality dishes per Four Seasons and MODE standards.
• Own your kitchen section across breakfast, lunch and dinner shifts.
• Maintain food quality, consistency and presentation.
• Train and mentor junior culinary team members.
• Ensure compliance with food safety and WHS requirements.
• Assist with stock control, ordering, and waste minimisation.
• Collaborate with the culinary team on menu development.
