Job summary

Four Seasons Hotel Sydney is seeking a Chef de Partie for MODE Kitchen & Bar, renowned for contemporary Australian cuisine and premium local produce. You will manage a kitchen section with precision, delivering high-quality dishes and leading a team in a luxury setting.

Ideal candidates have experience as Chef de Partie or senior Demi Chef in high-volume, fine dining. Flexibility for a rotating roster, and strong food safety knowledge are essential to maintain top standards across all service

Responsibilities

• Prepare and present high-quality dishes per Four Seasons and MODE standards.
• Own your kitchen section across breakfast, lunch and dinner shifts.
• Maintain food quality, consistency and presentation.
• Train and mentor junior culinary team members.
• Ensure compliance with food safety and WHS requirements.
• Assist with stock control, ordering, and waste minimisation.
• Collaborate with the culinary team on menu development.

About the Role

At Four Seasons Hotel Sydney, we believe exceptional dining experiences are built on passion, creativity, and genuine hospitality. As a Chef de Partie at MODE Kitchen & Bar, you will play a key role in delivering outstanding culinary experiences within our signature restaurant, renowned for its contemporary Australian cuisine, premium local produce, and elevated dining experience.

Working alongside a talented team of culinary professionals, you will take ownership of your section, ensuring every dish is prepared with precision, consistency, and attention to detail. You will contribute to creating memorable guest experiences that reflect the quality, craftsmanship, and excellence synonymous with the Four Seasons brand.

What You Will Do

• Prepare and present high-quality dishes in accordance with Four Seasons and MODE Kitchen & Bar standards and recipes.

• Take ownership of your designated kitchen section, ensuring smooth and efficient service during breakfast, lunch, and dinner operations.

• Maintain exceptional food quality, consistency, and presentation standards at all times.

• Support the training, coaching, and development of Commis Chefs and junior culinary team members.

• Ensure compliance with food safety, hygiene, and workplace health and safety requirements.

• Assist with stock control, ordering, inventory management, and minimising food waste.

• Collaborate with the wider culinary team to deliver exceptional dining experiences and exceed guest expectations.

• Contribute ideas and creativity to menu development, seasonal offerings, and continuous improvement initiatives within MODE Kitchen & Bar.
  

What You Will Bring

• A genuine passion for culinary excellence and creating memorable restaurant dining experiences.

• Previous experience as a Chef de Partie, or a strong Demi Chef ready to take the next step, within a quality restaurant, luxury hotel, or fine dining environment.

• Experience working in a high-volume, à la carte restaurant operation.

• Strong knowledge of food preparation techniques, kitchen operations, and food safety standards.

• Excellent organisational skills, attention to detail, and the ability to prioritise in a fast-paced environment.

• A collaborative approach and strong communication skills.

• A positive attitude with a commitment to delivering exceptional quality and service.

• Flexibility to work a rotating roster, including evenings, weekends, and public holidays.

• Relevant culinary qualifications and Food Safety knowledge.
