Job summary

Hamilton Island's Reef View Hotel, Pool Terrace, seeks an experienced Chef de Partie to join a busy hotel kitchen, with a focus on dinner and late-night in-room dining. You will work across Pans, Pass, Larder and Room Service, taking ownership of your section and ensuring consistency during service.

You should hold a Certificate III in Commercial Cookery, have Chef de Partie experience, and be capable of managing multiple service requirements with strong organisation.

Qualifications

• Certificate III in Commercial Cookery or equivalent qualification.
• Previous experience at Chef de Partie level in a busy kitchen.
• Experience across Pans, Pass and Larder sections.
• Experience in a busy à la carte restaurant or hotel kitchen.
• Ability to manage a section during dinner service.
• Strong organisation and ability to manage multiple service requirements.
• Flexibility to work dinner and late-night service.

Responsibilities

• Focus on dinner and late-night in-room dining, across Pans, Pass, Larder and Room Service.
• Manage mise en place, own your section, and ensure consistent delivery throughout service.
• Stay organised and communicate with the brigade to balance competing service demands.
• Maintain quality and presentation during high-volume periods.
