Job summary

AVC Operations Pty Limited – Byron Bay NSW is seeking a Bottleshop Manager to lead the day-to-day retail operation at North Byron Hotel. Based at 61 Bayshore Drive, you’ll drive sales, optimise costs and develop a high-performing team while delivering outstanding guest service.

You'll oversee beverage listings, supplier relationships, marketing activity and compliance, balancing exceptional customer experience with commercial performance in a vibrant, high-volume venue.

Qualifications

• Experience managing a bottleshop, retail liquor operation or high-volume hospitality department.
• Strong knowledge of beverage products and customer experience.
• Proven financial and commercial acumen, including exposure to budgets and P&L reporting.
• Experience leading and developing high-performing teams.
• Excellent communication, organisation and problem-solving skills.

Responsibilities

• Lead and motivate the retail team to deliver exceptional customer service.
• Drive sales, profitability, labour performance and expense control.
• Manage beverage listings, COGS, stock-related initiatives and supplier relationships.
• Review financial performance and identify opportunities to improve results.
• Develop and implement operational procedures and service standards.
• Build strong relationships with guests, team members, suppliers and the local community.
• Support the delivery of promotions, events and retail marketing initiatives.
• Monitor competitor activity and identify opportunities for growth.
• Recruit, train, coach and develop team members and leaders.
• Conduct team meetings, performance reviews and people-planning activities.
• Champion North Byron Hotel's service standards, values and F&B non-negotiables.
• Ensure compliance with WHS, quality and regulatory requirements.
• Create a positive team culture that supports engagement, retention and continuous improvement.

You'll be an experienced hospitality or retail leader with a strong understanding of beverage operations and the ability to balance exceptional service with commercial performance.

You'll bring:
