Job summary

The Plaza Hotel in Sydney's CBD is seeking a skilled Bartender to join our team across The Plaza's bars—from our basement cocktail bar to the Level One nightclub and bistro/sports bar. You will craft cocktails, deliver fast, friendly service, and maintain knowledge of the drinks menu while staying sharp in a busy, late-night environment.

NSW RSA certification is essential, and availability for nights and weekends is required.

Qualifications

Responsibilities

• Prepare and serve cocktails, beer, wine, and spirits to a high standard.

• Operate the POS, handle cash/cards, and manage tabs accurately.
• Maintain bar cleanliness and presentation throughout service.
• Check IDs and comply with RSA obligations at all times.

The Plaza Hotel is one of Sydney CBD's most iconic multi-level entertainment venues, bringing together dining, cocktails, and nightlife under one roof at 600 George Street. From our intimate basement cocktail bar with handcrafted drinks and DJ entertainment, to our Level One nightclub hosting international and local talent, through to our bistro and sports bar, The Plaza is where Sydney comes to be seen. About the Role

We're on the lookout for a skilled and energetic Bartender to join our team across The Plaza's bars — from handcrafted cocktails in our basement bar to high-volume service in our nightclub and bistro/sports bar. You'll be responsible for creating great drinks, great moments, and great guest experiences, often all at once, in one of Sydney's busiest and best-known venues.

This role suits someone who takes pride in their craft behind the bar but can also move fast and stay sharp when the room fills up and the pace picks up.

Key Responsibilities

• Prepare and serve a full range of beverages — cocktails, beer, wine, and spirits — to a consistently high standard
• Deliver fast, friendly, and efficient service across busy bar periods, including peak nightlife trade
• Maintain full knowledge of the drinks menu, including seasonal and signature cocktails, and confidently make recommendations to guestsOperate the POS system accurately, handle cash and card transactions, and manage tabs
• Maintain bar cleanliness, stock levels, and presentation standards throughout service
• Check ID and respond to Responsible Service of Alcohol (RSA) obligations at all times
• Work closely with venue management, security, and floor staff to ensure smooth service and guest safety
• Assist with stocktake, cellar/keg changes, and general bar setup and pack-down as required

About You

• Previous experience as a Bartender in a busy bar, nightclub, or hospitality venue
• Current NSW RSA certification (essential)
• Solid cocktail knowledge and confident, efficient technique behind the bar
• Able to stay calm, accurate, and guest-focused under pressure in a loud, fast-paced, late-night environment
• Strong communication and teamwork skills
• Well presented and comfortable engaging with a wide range of guests
• Availability to work nights and weekends, including late finishes
