InterContinental Melbourne The Rialto is seeking a Bar Manager for Petit Crenn, Melbourne. You will lead bar operations, develop a high-performing team and deliver exceptional guest experiences in a luxury setting.

You will work closely with the Restaurant Manager to champion premium beverages, maintain service standards, and drive sales while ensuring compliance and safety across all bar activities.

Qualifications

• 2–3 years leadership experience as a Bar Manager in a high-end setting
• Excellent knowledge of Australian and European wines and spirits
• Strong experience with classic cocktails and trend awareness
• Victorian Responsible Service of Alcohol Certification
• Hospitality/food & beverage management qualification preferred
• Excellent interpersonal and teamwork skills
• Ability to work in a fast-paced environment and manage workload priorities

Responsabilités

• Oversee daily bar operations and maintain service standards
• Open, operate, and close bar areas in line with procedures
• Manage guest feedback professionally and report outcomes
• Handle guest transactions accurately per policies
• Ensure health, safety and licensing compliance across bar operations
• Maintain beverage quality and presentation consistency
• Lead training and upselling initiatives for the team
• Utilise POS and inventory systems effectively and train staff
• Support promotions, events, seasonal menus and sales initiatives
• Maintain reservations, events, staff records, stock ordering and docs
• Monitor sales, trends and KPIs to drive planning and decision-making
• Manage beverage costs, wastage and stock variances
• Conduct stocktakes and ensure responsible stock use
• Promote profitability and cost control through KPIs
• Recruit, train and mentor team members for ongoing success
• Oversee rostering and labour resources to meet needs
• Ensure WHS compliance and required trainings
• Perform other duties as directed by Management
