Job summary

Ombra, a cocktail and wine bar in Sydney's CBD, seeks an experienced Bar Manager to lead day-to-day operations with creativity, hospitality and strong commercial awareness. You will manage a high-performing team, drive exceptional beverage service, and own stock control and cost management, balancing speed with quality during busy services.

You will mentor staff, develop seasonal menus, and work with suppliers to optimise margins while maintaining guest-centric service.

Qualifications

• Proven experience as Bar Manager or senior bartender aiming for the next step.
• Excellent cocktail knowledge, strong spirits expertise and a genuine appreciation for wine.
• A creative approach to drinks without losing speed, consistency and profitability.
• Strong leadership skills and the ability to train, motivate and inspire a team.
• A sound understanding of beverage costing, GP, inventory and stock management.
• A confident, approachable personality and a genuine love of looking after people.
• The ability to remain organised, composed and hands-on during busy services.
• Current NSW RSA

Responsibilities

• Leading, mentoring and developing a high-performing bar team.
• Delivering consistently exceptional cocktails, wine service and guest experiences.
• Taking ownership of beverage operations, stock control, ordering, inventory and cost management.
• Driving cocktail development, seasonal menus and continuous improvement of our beverage offering.
• Maintaining strong relationships with suppliers and identifying opportunities to improve margins and product selection.
• Managing bar standards, preparation, presentation and service efficiency.
• Working closely with venue management to drive revenue, profitability and the overall guest experience.
• Creating a positive, accountable and energetic team culture.
