Job summary

ALEX and Co. in Parramatta is seeking a hands-on Bar Manager to own the bar operation, lead the team and drive growth in a high-volume hospitality setting.

You will be responsible for beverage sales, stock control, COGS, labour productivity and team performance, while delivering a seamless guest experience across bar, restaurant and functions. This role requires strong leadership, comprehensive cocktail knowledge, and a commercial mindset to grow beverage revenue, with ownership and hands-on

Qualifications

• Experience as Bar Manager or senior bar leadership in high-volume venues.
• Strong cocktail and beverage knowledge.
• Understanding of stock control, beverage COGS, wastage and margins.
• Commercial mindset to grow beverage revenue.
• Hands-on leader able to train and hold a team accountable.
• Excellent organisation and communication skills.

Responsibilities

• Lead and develop the bar team.
• Maintain cocktail, wine, beer and spirits knowledge.
• Drive beverage sales and raise average guest spend.
• Manage beverage ordering, stock takes and inventory.
• Monitor COGS, wastage and stock variances.
• Oversee bar labour and productivity.
• Ensure bar presentation, cleanliness and organisation.
• Follow opening and closing procedures.
• Collaborate on cocktail and beverage menu development.
• Support events and high-volume service.
• Ensure RSA/licensing compliance.
• Foster a professional bar culture.
