Job summary

Ardour Milton Park Bowral, Bowral NSW, is seeking a Bar Manager to lead daily bar operations and support exceptional events and guest experiences. You will work closely with the Restaurant Manager and F&B leadership to maintain elevated hospitality standards across the Polo Bar and Horderns Restaurant.

Qualifications

• Experience in bar/beverage management within luxury hospitality.
• Knowledge of cocktails, spirits, and wine (WSET Level 2 desirable).
• Leadership with a focus on team development and service excellence.
• Proficiency in POS systems and bar management software.
• Strong communication and interpersonal skills.
• Guest-focused and storytelling mindset.

Responsibilities

• Curate a premium beverage offering tailored to guest preferences and seasonal themes.
• Recruit, train, and mentor bar staff to deliver exceptional service.
• Build relationships with guests and locals to promote repeat clientele.
• Ensure RSA and health and safety compliance and internal policies across bar operations.
• Oversee stock, supplier relationships, and cost management to optimise margins and reduce waste.
• Collaborate with restaurant, events and hotel teams to provide integrated guest experiences.
• Stay ahead of industry trends and refine the Polo Bar’s offering.

Ardour Milton Park Bowral has a new opportunity for an Bar Manager to join our passionate Food & Beverage team.

As Bar Manager, you will play a key role in leading daily restaurant operations while supporting the delivery of exceptional events and guest experiences. Working closely with the Restaurant Manager and broader Food & Beverage leadership team, you will help create a seamless service environment that reflects the high standards and personalised hospitality for which Ardour Milton Park Bowral is renowned.

What you’ll be doing…

• Curate a premium beverage offering, including signature cocktails, fine wines, and artisanal spirits, tailored to guest preferences and seasonal themes;
• Recruit, train, and mentor bar staff to deliver exceptional service, product knowledge, and hospitality;
• Forge loyal relationships with guests and locals to promote repeated clientele;
• Ensure compliance with RSA, health and safety regulations, and internal policies across all bar operations;
• Oversee stock control, supplier relationships, and cost management to optimise margins and minimise waste.
• Build rapport with guests and locals, fostering loyalty and repeat visitation through personalised service and memorable experiences.
• Work closely with restaurant, events, and hotel teams to support seamless service and integrated guest experiences.
• Stay ahead of industry trends, introduce new products and experiences, and continuously refine the Polo Bar’s offering.

You’ll thrive in this role if you have...

• Proven experience in bar or beverage management within a luxury or high-end hospitality environment;
• Strong knowledge of classic and contemporary cocktails, spirits, and wine (WSET Level 2 desirable);
• Leadership experience with a focus on team development and service excellence;
• Proficiency in POS systems, bar management software, and inventory control;
• Exceptional communication, interpersonal, and conflict resolution skills;
• A vibrant, guest-focused personality with a passion for hospitality and storytelling.
