Job summary

Nucleus International Recruitment – Hamilton Island is seeking an experienced Baker for Bob's Bakery on Hamilton Island. This night production role starts around 4pm and runs to midnight–3am, focusing on yeast breads, sourdough and pastries for the next day.

You will craft breads from scratch, manage fermentation, and produce croissants and danishes, working as part of a busy island bakery serving guests and venues.

Qualifications

• Certificate III in Bakery or equivalent trade qualification (Essential)
• Valid Driver's Licence (Essential)
• Proven experience producing yeast-risen breads and sourdough from scratch; croissants and danishes.

Responsibilities

• Oversee nightly bakery production, baking yeast breads, sourdough and pastries for the next day
• Prepare and manage doughs from scratch, including sourdough fermentation
• Produce laminated pastries such as croissants and danishes

Job Description

BAKER - Bob's Bakery | Hamilton Island Salary $80,000 plus superannuation Located along Front Street overlooking Hamilton Island Marina, Bob's Bakery is a busy island favourite producing fresh breads, pastries and baked goods for our guests and venues across Hamilton Island.

We're looking for an experienced Baker with strong scratch-baking skills to join our team. You'll need proven experience with yeast-risen breads and sourdough made from scratch, along with the technical skills to produce croissants and danishes from scratch. This is a night production role, with shifts commencing from approximately 4pm and finishing between midnight and 3am.

What you'll be doing You'll be hands-on across nightly bakery production, preparing and baking yeast-risen breads, sourdough and a range of pastries for the following day's trade. You'll work with doughs from scratch, including preparing and managing sourdough, and producing laminated pastries such as croissants and danishes.

Working as part of the bakery team, you'll need to manage your time carefully to meet production schedules while maintaining consistent quality, presentation and food safety standards. What we're looking for Certificate III in Bakery or equivalent trade qualification (Essential)

Valid Driver's Licence (Essential) Proven experience producing yeast-risen breads and sourdough from scratch Demonstrated experience making croissants and danishes from scratch

Strong understanding of dough preparation, fermentation and bakery production Ability to work efficiently within a busy, high-volume bakery environment Must be available to work night shifts starting around 4pm and finishing between midnight and 3am
