Job summary

dnata catering & retail in Sydney is seeking a dedicated Sous Chef to lead and support a team in a fast-paced inflight catering environment. You will oversee food production, quality, safety and on-time departure across multiple flights, ensuring recipes and standards are met.

Qualifications

• Trade qualified Chef with 2+ years’ experience in high-volume food production.
• Strong knowledge of HACCP, food safety and OHS requirements.
• Experience in airline catering or other service-focused environments.
• Proven leadership skills and ability to work effectively in a team.
• Experience in HALAL food production and equipment segregation practices.
• Financially and cost conscious with strong communication and organisational skills.
• Proficient in Microsoft Office and Windows applications.
• Able to obtain a clear National Police Check.
• Available to work full-time (38 hours per week) in a permanent role.

Responsibilities

• Ensuring your area is properly organized, staffed and directed.
• Ordering required food and equipment daily to satisfy the production plan.
• Providing decisive leadership and on the job training to lower level staff members.
• Executing and supervising food production, packing & tray-set activities.
• Preparing complex meals or dishes, to specifications provided.
• Monitoring and ensuring KPI compliance across the business, including recipe specifications.
• Monitoring and controlling labour, food costs and shrinkage to budget.
• Participating in the development of food products and menus as needed for customer menu presentations.
