Mandarin Oriental’s Emirates Palace Abu Dhabi is seeking a Sushi Head Chef to lead the Sushi production in Strawfire, drive menu development, and ensure culinary quality. You will manage operations, collaborate with the executive chef, and lead a team to deliver exceptional seafood offerings in a luxury hotel setting.

The role requires extensive sushi knowledge, strong leadership, and a track record of maintaining top food safety standards.

Qualifications

• Ten years of hotel kitchen experience with international exposure.
• Extensive knowledge of sushi and sanitation standards.
• Strong leadership, training ability and organizational skills.
• Excellent communication and teamwork abilities.

Responsabilités

• Lead and manage sushi production to high standards.
• Develop new dishes and seasonal menus with cost awareness.
• Oversee kitchen operations, budgeting and events.
• Maintain hygiene and safety across the sushi section.
