Job summary

Emirates Palace Mandarin Oriental, Abu Dhabi is seeking a Sushi Head Chef to lead the Sushi production in Strawfire outlet, elevating quality and creativity in every dish. You will drive menu innovation, oversee costs and collaborate with the Executive Chef to maintain the hotel’s luxury standards.

The role requires strong leadership, deep knowledge of sushi and sanitation, and the ability to train and develop a high-performing kitchen team in a prestigious, 5-star setting.

Qualifications

• Ten years of experience in kitchen field in hotel industries.
• Must have international kitchen experience.
• Postgraduate and/or Hotel Management School/Apprenticeship; Master’s degree preferred but not required.
• Extensive knowledge of Sushi; sanitation knowledge in food handling; high level of creativity and quality standards.
• Strong leadership, training techniques, communication and organizational skills.

Responsibilities

• Lead and manage Sushi production to highest standards in Strawfire outlet.
• Communicate status of sushi production to Executive Chef.
• Create and implement seasonal menu changes.
• Organize special events and food promotions.
• Ensure sushi section provides outstanding service during events and daily service.
• Maintain recipe execution and product knowledge; ensure kitchen hygiene and safety.
