Qualifications

• Proven leadership in a luxury restaurant or hotel kitchen.
• Strong knowledge of traditional and contemporary Japanese cuisine.
• Advanced skills in sushi preparation, fish fabrication and knife techniques.

Responsibilities

• Lead daily operations of the sushi kitchen with focus on quality, presentation, and hygiene.
• Collaborate with Head Chef and Culinary Leadership to develop seasonal sushi offerings.
• Monitor food costs and ensure consistency of taste and portion control.
• Maintain high standards of freshness and rotation of ingredients.
• Develop and train a high-performing culinary team for luxury dining experiences.
