Job summary

Mandarin Oriental Abu Dhabi seeks a Sushi Head Chef to lead the sushi kitchen in Strawfire, ensuring top standards and creative menu development. The role reports to the Restaurant Executive Chef and requires strong leadership and product knowledge.

Based at Emirates Palace, you will manage seasonal changes, maintain rigorous quality and hygiene, and collaborate with events teams to deliver exceptional guest experiences in a luxury hotel setting.

Qualifications

• Ten years of experience in hotel kitchen operations.
• International kitchen experience is required.
• Postgraduate and/or hotel management education preferred.
• Strong knowledge of sushi and seafood products.
• High creativity with strict adherence to quality standards.

Responsibilities

• Lead and organize all aspects of sushi production to MO standards.
• Develop seasonal menus and cost controls with the Exec Chef.
• Monitor sanitation, quality and product knowledge across the team.
• Train kitchen staff and manage staff performance and development.
• Communicate sushi production status to the Exec Chef and Events team.
• Ensure exceptional service during events and peak periods.
