Job summary

Dukes The Palm Dubai Hotel is seeking a professional Sous Chef to be the second in command in our kitchen, following Executive Chef’s specifications and guidelines. The successful candidate will employ culinary and managerial skills to play a critical role in maintaining and enhancing customer satisfaction.

The Sous Chef will influence skills, knowledge, attitude, communication and team spirit across the kitchen, assist in menu design, and ensure timely kitchen operations meeting our quality

Qualifications

• Previous experience in a large hotel with at least 500 keys in a luxury property is required.
• Pre-opening experience is an advantage.
• Proven work experience as a Sous Chef is essential.

Responsibilities

• Helping in the preparation and design of all food and drinks menus.
• Ensuring that the kitchen operates in a timely way that meets Dukes The Palm quality standards.
• Responsibilities for all stations of kitchen ensuring standards are kept.
• Order supplies to stock inventory appropriately.
• Have good fundamental cookery skills covering Cold Kitchen and Hot Kitchen in a fast-paced service.
• Liaise with other Sous Chefs, Chef de Cuisines & Junior Sous Chefs regarding items or staff from other departments.
• Supervise and carry out production of all dishes according to the recipe and specifications, ensuring taste, portions, quality and presentation meet standards.
• Control food cost, portions and market lists with the Executive Chef and procurement.
