You will work across brand concepts, ensuring consistent taste, temperature, and presentation during service.

The role emphasizes structured mise en place, speed, and pass communication, with opportunities to lead a pastry team and contribute to menu development in a fast-paced environment.

Qualifications

• Experience in restaurant pastry or dessert production.
• Ability to develop modern plated desserts for multiple brands.
• Strong understanding of HACCP and food safety requirements.

Responsibilities

• Prepare, plate, and finish plated desserts to agreed recipes and standards across concepts.
• Lead dessert development and contribute to menus reflecting brand concepts and guest profiles.
• Plan prep according to reservations and forecasted covers; deliver dessert service with speed and precision.
• Standardise recipes, plating references, and maintain quality checks on ingredients and finished desserts.
• Support recruitment, training, and performance development within the pastry team.
