Job summary

Wynn Al Marjan Island is seeking a Pastry Chef for its Indian Brasserie to lead the kitchen team, develop menus, and ensure top quality Indian pastries and desserts. The role requires extensive leadership, culinary expertise in Indian Brasserie, and strong cost controls, located in the UAE.

Ideal candidates will have 8+ years in a 5-star kitchen, robust team leadership, and a focus on quality, presentation, and HACCP compliance.

Qualifications

• Secondary school diploma or equivalent; culinary qualification preferred.
• Minimum of 8 years' experience in a 5-star kitchen environment, including Indian Brasserie.
• Strong knowledge of Indian Brasserie cuisine, including cost control and pricing.

Responsibilities

• Oversee daily operations of the Indian Brasserie kitchen to ensure efficiency and consistency.
• Monitor resource usage and optimize equipment, ingredients, and inventory.
• Develop weekly set menus, monthly promotions, and seasonal offerings with the Executive Chef.
• Ensure all dishes are prepared and presented to established recipes and quality standards.
• Lead and coach kitchen team to maintain high performance and teamwork.
• Maintain cleanliness and hygiene per HACCP, health and safety regulations.
• Deliver high-quality Indian Brasserie cuisine and address guest requests to enhance dining.
