Job summary

Ennismore's Delano Dubai on Bluewaters Island seeks a Restaurant Manager for Tutto Passa to lead daily operations across breakfast, lunch and dinner, delivering warm, elevated Italian hospitality.

You will supervise floor management, guest engagement, and revenue generation while collaborating with F&B leadership, culinary teams and hotel management to ensure seamless service and exceptional guest experiences in a fast-paced luxury setting.

Qualifications

• Proven leadership of restaurant teams in luxury, elevated environments.
• Strong experience directing high-quality À la Carte service.
• Experience with Italian or Mediterranean concepts is highly desirable.
• Excellent guest engagement and service recovery skills.
• Solid understanding of revenue, cost control and profitability in a restaurant setting.
• Experience coaching and developing diverse restaurant teams.

Responsibilities

• Lead daily operation across breakfast, lunch and dinner with high standards.
• Oversee elevated À la Carte lunch and dinner services with strong floor management.
• Be highly visible on the floor, building genuine guest relationships.
• Develop the restaurant team and foster a positive working culture.
• Manage service transitions and staffing deployment according to reservations.
• Conduct daily briefings on reservations, VIPs, menus and priorities.
• Maintain knowledge of the Italian-inspired menu, ingredients and concept.
• Collaborate with culinary and bar teams to ensure timing and presentation.
• Drive revenue through upselling and effective floor management.
• Monitor KPIs such as revenue, covers, spend and cost performance.
