Job summary

Delano Dubai is seeking a Restaurant Manager for Tutto Passa to lead daily operations of an elevated Italian restaurant within a luxury hotel. You will craft warm, energetic experiences across breakfast, lunch and dinner, ensuring consistency and personal guest engagement.

Working with the Director of Food & Beverage and the DELANO team, you will drive service excellence, develop the team, and optimize revenue while maintaining high standards of quality and hospitality.

Qualifications

• Proven experience leading restaurant operations in luxury hospitality.
• Strong leadership and people development capabilities.
• Excellent knowledge of Italian-inspired cuisine and service sequences.
• Track record of delivering high-end guest experiences.
• Ability to balance busy services with elevated standards.
• Commercial awareness of revenue, cost and labour metrics.
• Fluency in English; additional languages are a plus.

Responsibilities

• Lead Tutto Passa across breakfast, lunch and dinner with high service standards.
• Manage floor, pacing, guest engagement and staff deployment.
• Develop and coach the restaurant team to deliver memorable experiences.
• Collaborate with F&B leadership to drive revenue and guest satisfaction.
• Ensure food safety, hygiene, and operational compliance.
• Monitor KPIs: revenue, covers, average spend, labour, costs.
