Job summary

Novotel & ibis Balikpapan is seeking a senior F&B leader to oversee all dining and beverage operations within a luxury hotel group. You will drive revenue, ensure exceptional service, and uphold Accor brand standards across multiple outlets in a dynamic environment.

The role requires strong financial acumen, proven leadership, and the ability to develop innovative dining concepts while maintaining strict compliance with health, safety and brand guidelines.

Qualifications

• Minimum 8 years of progressive Food & Beverage experience in luxury hotels, with senior leadership responsibilities.
• Strong knowledge of luxury hospitality operations, Accor brand standards, and guest service excellence.
• Demonstrated ability to manage multiple F&B outlets, banqueting operations and large teams.
• Solid budgeting, cost control, revenue management and business development skills.
• Excellent leadership, communication, interpersonal and problem-solving abilities.

Responsibilities

• Provide strategic leadership and full operational oversight of all F&B outlets, bars, banqueting events and culinary operations.
• Ensure all F&B operations meet brand standards, service excellence expectations, and operating procedures.
• Drive F&B revenue, profitability and financial performance by achieving budgets and maximizing opportunities.
• Develop and implement F&B strategies, annual budgets, business plans and revenue initiatives.
• Lead and develop the F&B team to ensure efficiency, accountability and high performance.
• Oversee the guest dining experience with emphasis on service delivery, complaint resolution and satisfaction.
• Collaborate with Executive Chef to maintain food quality, menu innovation and profitability.
• Ensure strict compliance with brand standards, HACCP, hygiene, health & safety and local regulations.
• Monitor departmental performance, financial results, guest feedback and KPIs; implement corrective actions.
• Identify market trends, introduce innovative dining concepts and promotions to strengthen competitiveness.
• Oversee manpower planning, recruitment, training, succession planning and performance management.
• Maintain control of inventory, purchasing, equipment, expenses and resources to maximize profitability.
• Collaborate with Sales, Marketing, Finance and other departments to maximise F&B opportunities and hotel performance.
• Conduct regular operational reviews, outlet inspections and departmental meetings to ensure consistency and continuous improvement.
