Hyatt Hotels Corporation in Dubai invites a skilled Chef de Partie - Sushi to join our luxury culinary team. You will craft authentic and contemporary Japanese dishes, ensuring exceptional quality, presentation and food safety across service periods.

Ideal candidates have 2–3 years of sushi experience in high-end hospitality, strong knife skills, and a passion for precise, artful plating. This role offers growth within a premium Hyatt property.

Qualifications

• Diploma or certification in Culinary Arts, Japanese Cuisine, or related culinary discipline preferred.
• 2–3 years of sushi chef or Chef de Partie - Sushi experience in luxury hospitality.
• Advanced knowledge of sushi prep, sashimi cutting, fish filleting, seafood handling, rice prep and Japanese ingredients.
• Strong understanding of HACCP, allergen management, hygiene and contamination prevention.

Responsabilités

• Prepare diverse sushi items including maki, nigiri, sashimi, temaki and signature creations.
• Demonstrate expert knife skills in cleaning, cutting, slicing, and filleting fish/seafood.
• Inspect freshness and quality of ingredients and report concerns to senior team.
• Prepare sushi rice and control cooking, seasoning, temperature and texture.
• Develop innovative sushi dishes, preserving authenticity of Japanese cuisine.
• Create apps, soups, sauces and garnishes to complement the sushi menu.
• Ensure quality, flavour, portion size, presentation and food safety.
• Coordinate with service staff to accommodate guest preferences and dietary needs.
