Job summary

Earth Hotels is seeking a senior bar lead to drive beverage execution, stock discipline, and consistent service across our venues. You will translate Earth’s beverage programme into safe, efficient daily service and coach a team of bartenders, mixologists, and barbacks.

You will collaborate closely with the Floor Supervisor and Venue Manager to optimize staffing, training, and procedures while upholding hygiene and safety standards.

Qualifications

• Senior bartender or bar supervisor experience.
• Strong classic technique, stock control and costing awareness.
• Hands-on coaching skills and ability to train others.
• Able to work collaboratively with guests and colleagues across departments.

Responsibilities

• Lead bar team and ensure beverage execution, bar readiness and stock discipline.
• Coach bartenders, mixologists and barbacks; assess recipe, hygiene and service competencies.
• Prepare staffing recommendations and training plans for the Venue Manager; maintain clear shift handovers.
• Support guest recovery and responsible service within delegated authority.
• Own execution of approved recipes, measures, glassware and presentation across assigned bars.
• Coordinate kitchen collaboration, non-alcoholic drinks and low-waste preparations using approved food-safety controls.
• Set proposed bar par levels and replenishment needs; submit purchase requests through approved channels.
• Coordinate stock counts, investigate discrepancies and track waste, transfers and breakage.

Lead the bar team and own consistent beverage execution, bar readiness and stock discipline, translating Earth’s beverage programme into safe, efficient and engaging daily service.

What on Earth Will You Do?

• Allocate bar stations, prep duties and breaks; coordinate ticket flow with the floor supervisor.
• Coach Bartenders, Mixologist and Barbacks; assess recipe, hygiene and service competencies.
• Prepare bar staffing recommendations and training plans for the Venue Manager; maintain clear shift handovers.
• Support guest recovery and responsible service within delegated authority.
• Own execution of approved recipes, measures, glassware and presentation across assigned bars.
• Guide the Mixologist’s recipe development and submit costed proposals to venue and F&B leadership for approval.
• Coordinate kitchen collaboration, non-alcoholic drinks and low-waste preparations using approved food-safety controls.
• Check batch yields, labels, storage and shelf-life and train the team before menu changes.
• Set proposed bar par levels and replenishment needs; submit purchase requests through approved channels.
• Coordinate stock counts, investigate discrepancies with management and track waste, transfers and breakage.
• Ensure POS orders, complimentary drinks and voids follow approved controls; no self-approval outside delegated authority.
• Own bar opening and closing checks and equipment‑cleaning schedules; report faults and track repairs with Engineering.
• Support assigned outlet and station setup, stock and equipment checks and report readiness gaps.
• Attend SOP, sequence‑of‑service, menu, systems and safety training and participate in mock services.
• Lead bar setup checks, recipe training, prep planning and bar‑team mock service.
• Senior bartending or bar supervisory experience, strong classic technique, stock control, costing awareness and hands‑on coaching skills.
• Work collaboratively and communicate clearly with guests and colleagues across departments.
• Follow approved hygiene, allergy communication, safety and emergency procedures; report incidents and unsafe conditions promptly.
• Carry out additional reasonable duties within training and competence as assigned by management.
