The Lana, Dubai - Dorchester Collection invites an experienced Captain to lead day-to-day operations of the F&B outlet in a luxury hotel setting. You will greet guests, present menus, and upsell with passion while maintaining impeccable service standards.

You will train and mentor a team of waiters, manage costs and revenue targets, and collaborate with other departments to ensure a flawless guest experience across all service touchpoints.

Qualifications

• Strong guest service ethic and ability to lead a team.
• Proven experience in luxury hotels/restaurants in the Middle East.
• Professional certification or hotel school diploma.
• Ability to train and mentor staff.
• English fluency; other languages desirable.

Responsibilities

• Oversee day-to-day operations of the F&B outlet to deliver top guest experience.
• Greet guests, present the menu, and upsell with passion and knowledge.
• Ensure the outlet is spotless and service standards are met by the team.
• Train and mentor wait staff to achieve excellence.
• Live the values of Passion, Personality, Respect, Working Together and Creativity.
• Monitor revenue targets and control costs within budgeted beverage and other expenses.
• Lead daily pre-service briefing to inform on hotel happenings and service plans.
• Coordinate with other departments to maintain presentation, cleanliness, and maintenance.
• Optimize restaurant reservations for productivity, satisfaction and revenue.
• Ensure beverage preparation, presentation and inventory are of high quality.
