Job summary

Mandarin Oriental Downtown, Dubai is seeking a Sous Chef to join Yù & Mì Restaurant. You will assist the Head Chef, lead a team of passionate cooks, and ensure the highest quality Chinese cuisine with impeccable dining experiences for guests.

Based in Dubai, you will drive menu execution, maintain rigorous hygiene and cost controls, and collaborate with the service team to exceed guest expectations in a five-star setting.

Qualifications

• Proven experience as a Sous Chef in a five-star luxury hotel or fine dining setting; Michelin-star experience in the UAE/Middle East is a plus.
• Expertise in Chinese cuisine with deep knowledge of traditional ingredients and techniques; creativity and innovation.
• Strong grasp of food cost control, inventory management, and procurement to support profitability.
• Excellent leadership skills and ability to guide a diverse culinary team in a high-performance environment.
• Excellent English communication; Chinese fluency is a strong advantage.

Responsibilities

• Assist Head Chef with menu planning and execution of premium Chinese cuisine reflecting luxury and culinary excellence.
• Oversee kitchen operations, ensuring top-quality food preparation, presentation, hygiene and safety.
• Manage food costs, inventory and procurement to maintain profitability without sacrificing quality.
• Ensure compliance with hygiene and food safety regulations to hotel and local standards.
• Lead, mentor and inspire the culinary team; work with service to enhance guest satisfaction and trends.
