Mandarin Oriental Downtown, Dubai is seeking a skilled Sous Chef to support the Head Chef in delivering premium Chinese cuisine and an exceptional dining experience. You will lead a passionate team, oversee daily kitchen operations and ensure top quality, hygiene, and cost control in a luxury hotel setting.

Ideal candidates will have five-star luxury or fine dining experience, strong English communication, and a flair for creativity, with Chinese language skills considered a plus.

Qualifications

• Proven experience as Sous Chef in a five-star luxury hotel; Michelin-star experience in the UAE/Middle East is a plus.
• Expertise in Chinese cuisine, with deep knowledge of traditional ingredients and techniques, plus creativity.

Responsibilities

• Support the Head Chef in menu planning and execution of premium Chinese cuisine that reflects luxury and culinary excellence.
• Oversee kitchen operations, ensuring top-quality food preparation, presentation, hygiene, and safety standards.
• Manage food costs, inventory, and procurement to maintain profitability without sacrificing quality.
• Ensure strict adherence to hygiene and food safety regulations in compliance with hotel and local standards.
• Lead, mentor, and inspire the culinary team, fostering a collaborative and innovative kitchen environment.
• Work closely with the Service team to enhance guest satisfaction, drive revenue, and stay ahead of culinary trends.
