Grand Millennium Al Wahda in Abu Dhabi is seeking a Demi Chef de Partie – Bakery to support daily bakery operations, producing breads, pastries, croissants, and viennoiserie. You will work under the Bakery Chef to ensure high quality, safety, and presentation in a luxury hospitality setting.

You will supervise junior staff, assist with inventory, and help deliver products that meet strict standards of taste and consistency, while maintaining FIFO and HACCP compliance within the bakery team.

Formación

• Experience in bakery production including breads, pastries, and viennoiserie.
• Knowledge of food safety, hygiene standards, and HACCP.
• Ability to supervise and train junior pastry staff.

Responsabilidades

• Prepare and bake breads, pastries, croissants, and other bakery items per standard recipes.
• Assist Chef de Partie in daily bakery operations.
• Maintain product quality, taste, texture, and presentation.
• Manage dough mixing, shaping, proofing, and baking per schedules.
• Monitor fermentation and baking times for consistency.
• Ensure cleanliness and HACCP compliance in the bakery area.
• Label, rotate, and store ingredients using FIFO.
• Assist with inventory and minimize waste.
• Operate bakery equipment safely and report maintenance needs.
• Support training of Commis Chefs and junior staff.
• Collaborate with culinary team to meet production goals.
