Job summary

Millennium Hotels & Resorts MEA seeks a Demi Chef de Partie – Bakery to support daily bakery operations in a luxury hospitality environment in Abu Dhabi. You will bake breads, pastries, and viennoiserie, ensuring top quality and presentation under the guidance of the Bakery Chef.

You will uphold food safety standards, help supervise junior team members, and contribute to meeting production schedules and service demands with meticulous attention to detail.

Responsibilities

• Prepare and bake a variety of breads, rolls, buns, pastries, croissants, and other bakery products according to standard recipes.
• Assist the Chef de Partie in the daily operations of the bakery section.
• Ensure consistency in product quality, taste, texture, and presentation.
• Prepare, mix, shape, proof, and bake dough according to production schedules.
• Monitor fermentation, baking times, and product quality to achieve consistent results.
• Maintain cleanliness and organization of the bakery section in compliance with food safety and hygiene standards.
• Ensure proper storage, labeling, and rotation of ingredients and finished products using FIFO procedures.
• Assist with inventory management, stock control, and minimizing food waste.
• Operate bakery equipment safely and report any maintenance issues.
• Support the training and development of Commis Chefs and junior team members.
• Work collaboratively with the culinary team to meet daily production and service requirements.
• Comply with HACCP, health, safety, and company standards.
• Perform other duties as assigned by the Bakery Chef or Executive Chef.
