Job summary

Mandarin Oriental Jumeira, Dubai is seeking a Commis 1 to join Tasca Kitchen. You will support mise en place, prep ingredients, and assist in buffet setup while upholding the hotel’s standards of quality and hygiene.

Ideal candidates have at least High School qualification; a culinary degree is a plus; and at least one year of kitchen experience in a Michelin-starred environment. The role requires long hours, physical stamina, and strong teamwork in a luxury hotel setting.

Qualifications

• High School qualification is required or equivalent.
• Degree or Higher National Diploma in Hospitality/Culinary art is preferred.
• At least 1 year of culinary experience as Commis 2 in a Michelin Starred restaurant.
• Basic experience in handling and preparing food, including specialty dishes like pizza.
• Ability to work long hours with a strong focus on operational excellence.
• Ability to move, lift, carry, push, pull, and place objects weighing ≤15 kg.
• Basic knowledge of kitchen tools and utensils to perform tasks.
• Knowledge of basic food hygiene is preferred.

Responsibilities

• Washes and peels ingredients for dishes.
• Ensure mise en place is prepared to the highest quality.
• Ensure setup and replenishment of buffets.
• Assist superiors with requisitions and storage.
• Inform superior when stock is low to maintain daily usage.
• Store ingredients in labelled containers for preservation.
• Clean and sanitize work surfaces, tools, and area.
• Report cleanliness and maintenance issues in kitchens and stewarding areas.
• Adhere to personal hygiene standards and food safety rules.
• Support other outlets and attend required meetings and training.
