Job summary

InterContinental Abu Dhabi, part of IHG Hotels & Resorts, seeks a Chef de Partie to lead a seafood kitchen section in a luxury dining environment. You will craft premium seafood dishes, ensure flawless service, and mentor junior team members, while upholding the highest standards of quality and presentation.

You will work with senior culinary leadership to develop menus, maintain strict hygiene, and deliver exceptional guest experiences across busy service periods.

Qualifications

• Strong knowledge of seafood preparation, fish handling, and seafood cooking techniques.
• Ability to lead an assigned kitchen section and guide junior staff.
• Good understanding of HACCP, hygiene, and temperature control standards.

Responsibilities

• Oversee daily operations of the assigned kitchen section and ensure efficient prep and service.
• Prepare, cook, and present seafood dishes following recipes and presentation guidelines.
• Ensure freshness and proper handling of seafood from prep to service.
• Maintain consistency in flavour, texture, and portion sizes in line with luxury dining standards.
• Supervise Demi Chefs de Partie and Commis Chefs and guide them to meet standards.
• Organise mise en place and ensure ingredients/equipment are ready for service.
• Monitor ingredient quality, freshness, storage, and shelf life with proper stock rotation.
• Ensure compliance with food safety, hygiene, sanitation, and HACCP throughout kitchen operations.
• Coordinate with Head Chef/Sous Chef to ensure timely, seamless service.
• Monitor stock levels, minimise waste, and support cost control through portioning.
