Job summary

InterContinental Abu Dhabi, part of IHG Hotels & Resorts, is seeking a Demi Chef de Partie for the Cold Kitchen. You will support the preparation and presentation of salads, cold appetizers and related items, ensuring freshness, quality and adherence to HACCP standards.

You will manage mise en place, supervise junior chefs, and coordinate with other kitchen sections to ensure smooth service and cost control during busy periods in a luxury hotel environment.

Qualifications

• Experience in cold kitchen operations, including salads, appetisers and cold platters.
• Strong knowledge of HACCP, food safety, hygiene and temperature control.
• Good organizational skills and attention to detail, with high culinary standards.

Responsibilities

• Assist the Chef de Partie in managing the daily operations of the Cold Kitchen.
• Prepare and present salads, cold appetisers, sandwiches, canapés and dressings.
• Ensure dishes use fresh ingredients and meet hotel standards.
• Organise mise en place and ensure readiness before service.
• Maintain consistency in flavour, portion sizes, freshness and presentation.
• Assist with buffet preparation and event catering as required.
• Ensure proper storage, labeling, dating and stock rotation.
