You will oversee a dedicated kitchen section, supervise junior chefs, and collaborate with the Head Chef to uphold the highest standards of fine dining and presentation.

Qualifications

• Previous experience as Chef de Partie or similar role in luxury hotel or fine dining.
• Strong seafood preparation and fish/shellfish handling knowledge.
• HACCP, food safety, hygiene, and temperature control knowledge.
• Ability to lead a kitchen section and mentor junior team members.
• Excellent organisational skills and attention to detail.
• Ability to work under pressure during busy service.

Responsibilities

• Oversee the daily operations of the assigned kitchen section.
• Prepare, cook, and present seafood dishes per recipes and standards.
• Ensure freshness, quality and proper handling of seafood.
• Apply appropriate cooking techniques to different seafood varieties.
• Maintain consistency in flavour, texture, portions, and presentation.
• Supervise and guide Demi Chefs de Partie and Commis Chefs.
• Organise mise en place and ensure ingredients/equipment are ready for service.
• Monitor stock levels and minimise food waste.
• Ensure HACCP and hygiene compliance across kitchen.
• Coordinate with Head Chef, Sous Chef and other sections for timely service.
• Inspect incoming seafood deliveries for quality.
• Maintain clean, hygienic workstations.
