Qualifications

• Experience in professional butchery, ideally in hospitality.
• Familiarity with HACCP and food safety standards.

Responsibilities

• Prepare, cut, portion, and store meats, poultry, fish, and seafood.
• Maintain freshness, quality, presentation, and yield in all products.
• Coordinate daily preparation and ensure timely delivery to kitchen outlets.
• Follow hygiene, sanitation, HACCP and safety regulations.
• Assist with inventory, ordering, receiving, storage, stock rotation and waste minimisation.
• Train and guide junior culinary team members.
• Maintain and clean butchery equipment and work areas.
• Contribute to guest satisfaction through quality product and consistent preparation.
