Qualifications

• Minimum 2-3 years' experience as Assistant Bar Manager or Bar Manager in a high-volume Dubai venue.
• Full knowledge of UAE alcohol licensing regulations and DTCM compliance.
• Strong knowledge of premium spirits and cocktails, including classic and avant-garde programs.
• Excellent cost control, inventory management, and pour-cost auditing.
• Ability to lead a large international team under pressure.

We are looking for an elite Assistant Bar Manager to support the Bar Manager in leading all beverage and day-to-day bar operations across Bâoli Dubai's four styles of service: Pool & Beach, Lounge, Dining, and Nightlife. This role balances the casual luxury of daytime beach club service with the precision, pace, and energy of an ultra-premium nightlife and bottle-service venue.

Key Responsibilities:

• Support the Bar Manager in leading beverage operations across Pool & Beach, Lounge, Dining, and Nightlife service.
• Manage, schedule, mentor, and motivate a large, diverse international team of bartenders and bar backs under intense pressure.
• Oversee all alcoholic and non-alcoholic beverage ordering, using data-driven par levels and historical sales trends to eliminate over-stocking and dead stock.
• Maintain tight control of the ordering pipeline to guarantee uninterrupted availability of premium spirits, fresh cocktail ingredients, and specialized non-alcoholic modifiers.
• Run precise monthly audits comparing physical inventory against POS data to isolate, report, and correct variances, shrinkage, and pouring inefficiencies.
• Manage high-value inventory, audit service steps, and eliminate wastage.
• Apply bar math (yield, drink costing) to hold strict pour-cost targets across both complex mixology programs and high-volume bottle service.
• Uphold the standard for premium spirits, classic cocktails, and avant-garde cocktail programs.
• Ensure full compliance with UAE alcohol licensing regulations, municipality health and safety directives, and the DTCM compliance framework.

Ideal Candidate:

• Minimum 2-3 years' experience as Assistant Bar Manager or Bar Manager within a high-volume, premium Dubai venue.
• Full knowledge of UAE alcohol licensing regulations, municipality health and safety directives, and the DTCM compliance framework.
• Deep understanding of premium spirits, classic cocktails, and avant-garde cocktail programs.
• Strong financial control skills, including high-value inventory management, service-step auditing, and wastage elimination.
• Advanced bar math skills: yield, drink costing, and pour-cost management.
• Ability to lead, schedule, and motivate a large international team under pressure.
• Flexible to work shifts, weekends, and public holidays in a fast-paced hospitality environment.
