Job summary

Placements24 in Vereeniging, Gauteng, seeks an experienced Food & Beverage Director to oversee culinary operations across outlets, bars, banqueting and room service, driving profitability and guest satisfaction.

Lead diverse teams of chefs, waitstaff and bartenders, develop menus, cost controls, and staff training; collaborate with Executive Chef on menu engineering; ensure compliance with health and safety standards; deliver outstanding service in a dynamic hotel and events setting.

Qualifications

• Minimum of 7 years of progressive experience in Food & Beverage management, with at least 3 years in a Director-level role, preferably within a hotel or large-scale catering environment.
• Proven experience in menu development, costing, and financial management (P&L).
• Strong leadership, team-building, and motivational skills.
• In-depth knowledge of culinary trends, wine, spirits, and mixology.
• Excellent understanding of hygiene, sanitation, and health & safety regulations.
• Proficiency in F&B management software and POS systems.
• Strong organizational and multitasking abilities.
• Excellent communication and interpersonal skills.
• Culinary degree or equivalent experience is highly preferred.

Responsibilities

• Develop and execute innovative food and beverage strategies to enhance guest satisfaction and revenue.
• Oversee daily operations of all hotel F&B outlets, including restaurants, bars, room service, and banqueting.
• Manage culinary teams, including chefs and kitchen staff, ensuring high standards of food quality and presentation.
• Develop and manage beverage programs, including wine lists and cocktail menus.
• Control food and beverage costs through effective inventory management, portion control, and waste reduction.
• Implement and maintain exceptional service standards across all F&B operations.
• Develop staff training programs to enhance service skills, product knowledge, and compliance.
• Manage vendor relationships and negotiate favorable pricing for supplies.
• Ensure compliance with all health, safety, and hygiene regulations.
• Collaborate with the Executive Chef on menu development and engineering.
• Plan and execute successful banquets and special events, coordinating with the events team.
• Monitor industry trends and competitor activities to maintain a competitive edge.
