Job summary

Radiant Hospitality Company invites a polished Senior Restaurant Manager to join a premium Mediterranean restaurant opening at the V&A Waterfront in Cape Town. You will report to the General Manager, acting as second-in-command and owning day-to-day floor operations, guest experience and shift-level performance.

This is a pre-opening appointment requiring leadership, stabilising service, and mentoring the front-of-house team to deliver exceptional standards in a high-energy setting.

Qualifications

• Minimum 3–4 years as Restaurant Manager (or Senior Assistant Manager) in a busy, premium restaurant in South Africa.
• Proven ability to lead service from the floor in a high-volume operation.
• Strong understanding of premium dining service standards.
• Demonstrable commercial awareness: sales, labour, cost of sales and P&L analysis.
• Industry experience with pre-opening operations is advantageous.

Responsibilities

• Lead service from the floor across dining room, bar and private dining during peak periods.
• Deputise for the General Manager in their absence and own day-to-day operations.
• Build relationships with guests, VIPs and regulars to deliver a personalised experience.
• Monitor shift-level sales, labour and cost performance against targets.
• Assist in rostering, onboarding and training of front-of-house teams prior to launch.
